01 / ABOUT THE PLACE

About this place

Tucked into the 1st basement floor of a building near the Yotsuya-sanchome intersection, Sumibi Yakiniku Yamaboshi Yotsuya Honten serves quality beef over charcoal in a relaxed, understated setting. When deciding what to order, the chef's choice omakase platter is a reliable place to start, pairing the day's featured cuts with grilling vegetables. Available in a quarter size for solo diners, a half size for 2, or a full size for groups, it lets parties of any size sample balanced selections of lean and well-marbled beef without overcommitting.

One of the restaurant's distinctive signatures is awa-roes (foam loin) and awa-harami (foam skirt steak), eaten with house-made soy sauce whipped into a delicate foam. Spooned over hot meat alongside a dab of wasabi, the light froth melts instantly on the tongue, enhancing the beef's natural savory depth. Tongue lovers will also find plenty to explore, including a comparison platter of premium thick-cut tongue, mid-tongue, and lower-jaw tongue, as well as ume-tan accented with sour plum and shiso leaf.

Between cuts or toward the end of the meal, substantial rice and soup dishes bring satisfying closure, from hearty garlic rice to gently simmered gomtang broth and oxtail porridge. Tables frequently fill up for dinner, making advance reservations a wise precaution, and late-night hours stretching well past midnight on Fridays and weekends add welcome flexibility.
